Pumphreys Italian High Roast Coffee Beans are roasted in the traditional way, fully supporting today’s demanding high-quality coffee culture.
The Italian style involves roasting coffee to a higher temperature and longer than a traditional lighter roast. Coffee beans, in this style, are roasted until they turn black and the natural coffee oils are produced.
This giving this coffee a lovely bitter edge and reminds a lot of people of dark chocolate. It’s very popular and is brewed in a French press as well as the popular espresso brewing method.

Recommended preparation
We would recommend that this high quality coffee be brewed in a traditional espresso machine by you coffee lovers. If you have one a lever machine you can create some very authentic taste and flavours. The soft infusion and unique pressure profile of these style of machines really favour this style of roast.
We would recommend brewing with a 2 to 1 brewed espresso to dry coffee weight. The best way to work this out is to put your brewing basket on the scale and fill it with espresso ground coffee. This will give you a good idea of how much coffee with fit in your brewing basket.
Every brewing basket will be slightly different so it is important to do this step. Let’s say for example your brewing basket holds 10g of coffee. Using the ratio of 2:1 we will need to produce an espresso that weighs 20g. This will help us to get the correct strength for the espresso.
Once we have tamped our coffee evenly we will then need to adjust our grind size. Slowing the brewing down will require us to grind our espresso a little finer to make it harder for the water to pass through the ground coffee.
Making our grind size coarser will have the opposite effect making it easier for the water to pass through faster. Normally we will see a good extraction happening between 20 and thirty seconds. You can fine tune this and adjust the extraction for your own particular taste preference.
Heritage
The Dark roast style commonly known as the Italian Roasting Style hit popularity in America through the Starbucks Coffee Company, it’s most famous proponent, but it is based on the traditional roasting methods found in Italy. Italy, like most of the world, is known to favour a darker style of roast that will produce a much bitter dominant flavour.
Italy is still known for producing the best Italian roast coffee. Even in Italy there is a difference in preference between certain areas of the country, as you would expect, but the common world view of Italian coffee is that it is dark roasted. Many Italian coffee brands feature in the global market place.
Actually as you go from south to north the preference for coffee roast tends to get lighter. The darkest of roasts tend to be found in more southern parts of Italy and Sicily and the lighter roasts in the most northern areas lie Trieste, the home of Illy Café

Having searched for some time to replace a couple of (Italian) brands of Italian coffee which have become almost impossible to obtain in the UK, I followed a friend’s recommendation in trying a few varieties of Pumphrey’s, bought as ready-ground for an espresso machine. We have bought the Italian High Roast beans from you, initially from the Green Market, now on line, since around 1975. It is consistently delicious, both for breakfast and for after lunch or in the evening. It does not lose any quality in the deep freeze so we buy six kg at a time, save a lot and never run out. We grind the coffee and use the Pumphrey filter papers.

I must admit that I wasn’t too keeping when I opened the foil bag, that lovely coffee smell was more sharply metallic. The beans are also smaller and shiny, however they are quicker to grind and you use less to get a strong coffee. The taste was surprisingly nice after the shock of the aroma from the beans. Might be because I have a cold and can’t smell things properly.
